Tiny11 is great and relatively simple to install. If you’re worried about security running a non-official operating system there are official versions of windows without bloat, though they are a little more complicated to install.
For Windows 11 you could install Win11 Enterprise IoT LTSC 2024 and for windows 10 Win 10 Enterprise IoT LTSC 2021.
Use a tool like Rufus to create an installation USB.
